I would suggest cheap and simple microcontrollers which have a fair number of analogue inputs instead of multiplexors. Each can be scanning its pots in parallel to others which should make it easier to take readings in the time available, maybe even do some filtering and noise removal.
You will probably also get better ADC resolution using those than you do with a RP2040 if that's useful to have.
