2880x1440@60 is less than 3840x2160@60 that is supported by Pi5, so the expectation would be that it would work.I want to try this VR kit with a Raspberry Pi:

Note that the DP variant is saying it is doing 120Hz, and that is unlikely to be supported.
Have you got a full datasheet for the displays? DSI is not a plug and play interface, so you will all the details. It is possible to reverse engineer the DSI setup if you get the HDMI driver board and have a decent storage oscilloscope, but it's not a trivial task.What about the DSI video outputs:

And it depends on whether that is 2channels of 4 lanes per display (ie 8 lanes total per display), or 4 lanes per display and 2 channels for the 2 displays. Pi5 does not support bonded DSI interfaces.
There's no standard connectors for DSI either.
