For sake of clarity: RealVNC server does not work with the wayland compositor running on Pi OS. RealVNC Viewer is just a VNC client and will work with any conformant VNC server.And you're wrong about RealVNC "now it's "supposed" to be incompatible with Wayland". That waas teh case on the initial release of Bookworm but was fixed a wile ago.
There is absolutely nothing wayland specific in the VNC (RFB) protocol. The server talks to the desktop system via the appropriate protocol, be it wayland, x11, or something else, and translates everything to messages that the VNC client understands.
Early on, RealVNC Viewer did not work with the new VNC server on Pi OS because they did not implement compatible authentication mechanisms. N.b. it worked fine with authentication turned off. Again, nothing to do with wayland. Then the new VNC server implemented RealVNC's proprietary authentication method, so now RealVNC Viewer works with the default settings on Pi OS.
