Main limitation on thinness is the battery, and the necessary parts of the Touch Display. If I could find a similar capacity battery that is thinner (albeit wider), I could perhaps reduce thickness more, although another component would become the blocker.
LiPo cells can be very thin.
This is not a recommendation, just a random search result, but one example. 10mm thick single cell.
Be very careful with lithium batteries. Follow all safety instructions.

A good option for a touchscreen laptop could be something like this.

I have one of these and it works well. Not this is a large screen (18.5") but you should find similar at a more typical laptop size (~14")

On which Pi to use. A compute module (CM4 or CM5) could be the most compact, but requires a carrier board. A custom carrier board would give you most options to get it all compact, but that isn't a trivial task.
