My setup includes:
PINN, wireguard, OMV, with docker containers of nginx-reverse-proxy, nextcloud, immich, nginx web server and gitlab (although gitlab tends to thrash my NAS a bit so I often exclude it).
I have not used dns-crypt so I can't help with that.
I have used pihole in the past, but not in a docker container. The 172.x.x.x IP address looks like an internal docker generated virtual bridge IP address to me, so you need to make sure all your other applications (in docker containers or otherwise) can map the DNS service to that IP address and map its ports accordingly. I guess there should be guide to installing PiHole in docker somewhere. Sorry, but I can't help much further than that at present.
