After looking at the source code of raindrop (https://github.com/raspberrypi-ui/raind ... rc/labwc.c) I have carefully backed-up the following files:
And then I have used the "Screen Configuration" (aka raindrop) tool and this time it successfully rotated the display, the cursor and the touchscreen.
I think that the changes from my first attempt was these changes of the /boot/firmware/config.txt file:
