Hi, thanks for the question. There will be many different opinions on this and, as you pointed out, vast amounts of the stuff online is hopelessly incorrect because it still talks about the legacy stack.
For video streaming these days I tend to go with MediaMTX. Though the webpage looks a bit scary at first, you just download and unpack the latest release for arm64 (assuming a recent Pi, though there's an armv7 version too) and then put this in the mediamtx.yml file:It works well with the latest Raspberry Pi OS and will output both WebRTC and RTSP streams.
