Two-way "nanny cam" or any two-way video service such as FaceTime would work. Regardless of what approach you take, there will be a learning period for your grandparents. IMHO the ideal approach is to accept that, and opt for the best "steady state" situation.
I think if they play with the system for a month or so they can learn it cause its not different from dish very much, but im just trying to have the capability to remote in and put on what they want to watch when i dont have time, or when i do have time be able to remote in and see what they see so i can talk them through it, because while im sitting there my papa can use the remote with no issues but i have to be able to tell him okay now you push this button to go this direction. So if i can remote in then i can walk him through and still give him the ability to work it himself.
If you want to involve a pi project in your solution, you could build a pi-based nanny cam...
