A new day and a new coffee, means a new search. And I found the solution, which I'll share here for future inquires into this same problem (that no one wanted to answer).
Basically, if you get a prompt to authenticate or unlock the default keyring (this is in reference to my original question mind you), simply do this:
open the file manager, press ctrl+h to show hidden folders/files.
go into .local/share
you should see a folder called keyring or keyrings, just delete it & then logout or reboot.
When you try your action again, you'll be asked to create a new default password. Voila!
I now have ProtonVPN working successfully on my raspberry pi 5 running Bookworm.
