if i recall bullseye also had overrides in .local/share for themes
also did you switch to x11(raspi-config), if i remember right bullseye is when they introduced mutter as the wm, instead of openbox which was standard for lxde.
the changes from buster to bullseye were significant as that's when they started to move away from lxde.
bookworm for example replaced the lxde gui parts for devices with 2gb+ of ram, only the lxde applications are used, the compositor is wayland, the wm is wayfire, the panel is wf-panel-pi
lxde is still there but you need to be running in x11 mode.
